Tomato & Cucumber Salad with Fresh Herbs

Ingredients
  • 6 cups fresh tomatoes (cut into small pieces)
  • 3 cups cucumbers (cubed)
  • 3 Tbsp. extra virgin olive oil
  • ¼ cup lemon balsamic vinegar
  • 1 tsp. salt (to taste)
  • 2 Tbsp. apple cider vinegar
  • ½ cup white or red onions (diced)
  • 2 Tbsp. fresh mint (chopped)
  • 1 Tbsp. fresh basil or cilantro (chopped)
  • Black pepper (to taste)
Notes:
  • Cut the tomatoes into small pieces.
  • Try one of Mother Earth’s bulk balsamic vinegars.
 
Preparation

Put tomatoes and cucumbers into a mixing bowl. Add all other ingredients. Mix until well combined and flavors mingle. Serve at room temperature as a side salad or over pasta. Enjoy!
